Gourmet Sandwich For A Lazy Lunch

Sunday, the weekend is coming to an end. Even though I work from home, and can make my own schedule, Sundays still feel like the end of the week for me. It's a day to get organized for the coming week and a day to gather my thoughts on the days passed. If the weather is nice then it's also a day to go for a walk with my hubby and the pooch. A day of lazy meals. My lazy dinner is already planned, Nasi Goreng.

Sunday brunch in our house is hardly ever a big affair. As a matter of fact I prefer big breakfast foods for dinner. This Sunday's lunch was a day of being to lazy to run out for supplies and instead use what was at hand. A loaf of potato bread, Hungarian Paprikas, an array cheese, and a variety of green leafy vegetables. This sandwich is what came out of that and a lazy sunny Spring day. A fantistic tasting sandwich who's flavors burst into your mouth. My husband said that it tasted like a gourmet sandwich one could purchase at a cafe for a high price. So this being a lazy Sunday I leave you with few words and our gourmet tasting sandwich. Enjoy and may the week ahead be a productive one.

Gourmet Sandwich for A Lazy Lunch

Potato bread or any artisan bread of choice
fresh mozzarella cheese, sliced
Hungarian Paprikas Salame, (paprika salami sausage), thinly sliced
Bibb lettuce
arugula greens
cherry tomatoes, sliced
mayonnaise or olive oil
German style mustard

Assemble as desired and bon appetite!

Classic Egg Salad and Another IIP

Today's recipe is for classic or old fashion egg salad, it may not be a very fancy salad or recipe but it's definitely one of our favorite lunches. I've been wanting to do a post for the egg salad for a while but it has just kept being pushed back and I never took photos of it until a couple of days ago. I have Penny to thank for the final push because the theme this month for her IIP (international incident party) is eggs. Well I actually had several ideas of different egg dishes I could make for the IIP, but quite honestly I took the easier way this time. I have been extremely busy working a big project that I will share with you guys in the coming weeks, so please make sure you come back to hear the news.

Obviously in order to make egg salad you need to have hard boiled eggs prepared. I have already shared my way of cooking perfect hard boiled eggs every time. You can find the instructions in my archives here.


I also want to add a little note to the technique, I have learned from so many websites that if you add a teaspoon of baking soda (soda bicarbonate) to the water it will make removing the shells much easier. Which honestly can be such a hassle because the shells can sometimes stick to the egg white. This last time I decided to add the baking soda and I peeled the egg shells under running water. If you have a special technique or trick share with the rest of us in the comments section below.

Ingredients:
6 hard boiled eggs
3-4 tbsp. mayonnaise
1/2 tsp. salt, adjust to taste
pinch ground black pepper, adjust to taste

large bowl
fork or potato masher
spoon

1. Remove the shells from the boiled eggs. Place the eggs in a large bowl, using either the back of the fork or a potato masher push down to break up the eggs. Continue until you have coarse pieces or to the desired consistency.

2. Add the mayonnaise to the bowl and mix until well incorporated. Sprinkle the salt and ground black pepper over the egg salad and mix until well incorporated. Taste and adjust salt and/or pepper if needed.

Grilled Cheese -n- Tomato sandwich with herbs

grilled cheese and tomatoGrilled cheese one of the easiest, fastest, and tastiest sandwiches. One of the most common ways to serve and eat grilled cheese is with a tomato soup. In this recipe we are skipping the soup but not the tomatoes to make a lighter summer time lunch. Also it's a good way to use the home made white bread from the previous post.
You'll need:
Bread
Butter
Gouda Cheese sliced, your choice
tomato slices
black pepper
oregano leaves
dried basil leaves

Skillet or frying pan

1. Prepare the bread slices by buttering both sides, then put them on a hot skillet,after 2 minutes flip the bread. Add 1 slice of cheese on each piece of bread, sprinkle a pinch of black pepper -oregano and basil. Add a couple of tomato slices to each piece of bread. Put 2 breads together and serve.

To make it a complete healthy lunch add some fresh sliced fruit and it's ready. So simple yet so good!
